- Salmon Cakes with Ancho Chile Dressing

was a recent addition to our menu, in response to the fish cake trend
and to find yet another way to serve the wildly popular salmon. You can
mix and shape the cakes up to six hours ahead of time, and refrigerate
them until you are ready to sauté them. The Ancho Chile Dressing can be
mixed a day ahead.
