Tomato Basil Bruschetta

Makes 15 pieces of bruschetta

 

Bruschetta is a light and refreshing appetizer that is a delicious and simple addition to any gathering.

 

Ingredients: 

 

Tomato Basil Relish:

4 heirloom tomatoes

2 tablespoons fruity olive oil

1 tablespoon white balsamic vinegar

¼ cup pear mozzarella, cut into thin slices

Salt and pepper, to taste

½ cup chiffonade fresh basil 

 

Bread:

1 baguette

1 tablespoon olive oil

1 garlic clove 

 

Directions:

 

Preheat oven to 400 degrees.  Cut the baguette into bite size pieces.  Brush pieces of bread on each side with olive oil.  Rub each side with the clove of garlic.  Place bread on un-greased cookie sheet and bake for 1 ½ - 2 minutes on each side. 

 

Deseed the heirloom tomatoes and dice.  Place diced tomatoes in large mixing bowl and add all other ingredients; olive oil, white balsamic vinegar, mozzarella slices, and fresh basil.  Add salt and pepper to taste.

 

To serve, top each piece of bread with a spoonful of the tomato basil relish.  Arrange bruschetta on a platter and serve as an appetizer.
