I saw you on ABC talking about using cornbeef leftovers and was wondering how do you get the casserole thick enough?

Hi Jill,
The easiest way to thicken any casserole is to add potatoes. When cooking with corned beef, most recipes already call for potatoes. So if you think the casserole should be thicker, just add a few more small potatoes and continue to cook for a bit longer.
The same is true when cooking soups or stews. Adding any root vegetable such as carrots, potatoes, etc. will always help thicken the consistency with out taking away from the flavor.
