200-Mile Initiative
Thursday, Jul 1, 2010
This summer Berghoff Catering & Restaurant Group has undertaken a huge feat in the culinary world by adapting more sustainable food policies and practices in our restaurant and catering kitchens. Our 200-Mile Initiative is just one more step in my family’s century-long commitment to having a “green attitude” and our development of gluten-free and vegan products is all part of our passion for serving all of Chicago.
My team has been working diligently since the start of spring, collaborating with local farmers, becoming knowledgeable of the Midwest’s growing cycle and researching cooking substitutions to adapt current recipes. It is important as a community and company that we continually seek ways to reduce our global footprint. This new phase in our company is all about knowing what to eat and when.
I hope all of you use this summer to improve your lifestyle and your health, and food is at the very heart of it. If a 112-year old restaurant can make the changes, anyone can.
Cheers!
Carlyn Berghoff
P.S. Thanks again to everyone who showed their support of our building engineer and dear friend, Dean Coronato, and his fight against cancer. Our collected efforts raised an astounding $10,000 towards DKMS Americas and added 354 new donors to the National Bone Marrow Registry. Dean is continuing his fight and still waiting for a match, but from myself and Dean’s family, thank you so much for everything.
