Celebrating the 6th annual Chicago Craft Beer Week, we here at the Berghoff Restaurant participated by hosting a private Food & Beer Pairing event. Beer experts as well as beer enthusiasts joined us for this opportunity to showcase some of our Berghoff crowd-pleasers. While guests indulged in our unique food and beer pairings, they also networked and enjoyed a meet-and-greet with beer consultant John Hannafan and nationally-recognized author and beer and brewing expert Randy Mosher! Educating the crowd on locally-brewed craft beer, Hannafan and Mosher truly excited fellow beer lovers with their passion, knowledge, and expertise.
Food samples at the event ranged from Smoked Pork and Slaw on a Pretzel Bun to the sweet and delicious Chocolate Ganache Cake Bites for dessert, and guests without a doubt left satisfied. The crowd favorite was the White Fish Crispy Tacos with Spicy Pineapple Relish that paired perfectly with the homebrewed Berghoff IPA. IPA Crispy White Fish Tacos with Spicy Grilled Pineapple Salsa
½ Pineapple peeled, cored and cut into ½’ thick slices
½ Jalapeño, seeded and diced
3T Minced Red Onion
3T Minced Cilantro
Juice of 1 Lime
Salt and Pepper to Taste
IPA Grilled White Fish
2 10oz White Fish Filets, Skin On
Salt and Pepper to taste
1.5 C IPA
1 C Sugar
Heat and dissolve sugar
2 T Corn starch
2 T Water
Crispy Corn Tortilla Shell: You can purchase from a retail vendor or purchase a tortilla fry basket online and cut tortillas into 4” pieces and put in the tortilla mold. Fry them for approximately 2 mins at 350 degrees or until crispy.
Make the Pineapple Salsa: Char the pineapple and dice it into small cubes. Mix all ingredients together in a medium bowl. Set aside.
Make the IPA Grilled White Fish: Season the fish with salt and pepper. Grill the flesh side down for approximately 2-3 minutes. Flip to the other side and grill another 2-3 min or until done. Remove and set aside.
Mix the remaining ingredients, slowly until mixture is thick, in a small to medium sized bowl. Brush mixture over grilled fish. Flake fish with a fork. Assemble tacos.
And lastly, enjoy the tacos with cold beer (Preferably Berghoff IPA)!
